268 g, (4 x 67g) rolls, split

Eggplant, baked without fat

50 g, drained

Roasted capsicum, not in oil

60 g, drained

97% fat-free deli sliced ham

Semi dried tomatoes, not in oil

75 g, drained

Green olives, drained

45 g, pitted, sliced

Fresh flat-leaf parsley

2 tbs, chopped


  1. Roughly mash beans in a bowl with a potato masher. Add ricotta and mix well. Season with salt and pepper.
  2. Top roll bases with bean mixture. Top bean mixture with eggplant, capsicum, ham, sun-dried tomatoes and olives. Sprinkle with parsley and sandwich with roll tops to serve.


SERVING SUGGESTION: Baby rocket leaves and grape tomatoes, drizzled with lemon juice. Add it: ⅓ cup (25g) grated parmesan cheese in Step 2. Swap it: Bread rolls for gluten-free rolls for a gluten-free meal .
