Canned mixed beans

Low-fat ricotta cheese
¼ cup(s), (80g)
Ciabatta bread
268 g, (4 x 67g) rolls, split
Eggplant, cooked without added fat
50 g
Roasted capsicum, not in oil
60 g, drained
97% fat-free deli sliced ham
100 g
Semi dried tomatoes, not in oil
75 g, drained
Pitted green olives
45 g, pitted, sliced
Fresh flat-leaf parsley
2 tbs, chopped
Instructions

Roughly mash beans in a bowl with a potato masher. Add ricotta and mix well. Season with salt and pepper.

Top roll bases with bean mixture. Top bean mixture with eggplant, capsicum, ham, sun-dried tomatoes and olives. Sprinkle with parsley and sandwich with roll tops to serve.
