Mashed sweet potato
orange sweet potato (kumara)
3 medium, (540g) cut into 3cm cubes
2 clove(s), peeled
99% fat-free plain yoghurt
½ cup(s), (120g)
- Place potatoes and garlic in a large saucepan. Pour in enough water to cover potatoes. Bring to the boil, cook for 8-10 minutes or until potatoes are tender.
- Drain and transfer potatoes and garlic to a large bowl. Add yoghurt and mash until smooth. Season to taste with salt and pepper. Yields about ½ cup per serving.
