Mango sorbet sandwiches

Crunchy wafers and nuts make a delicious contrast to the smooth sorbet and tangy trio of fresh fruit.


Ingredients
Wafer biscuit, Dutch caramel
125 g
Pistachios
12 g, (1 tbs) shelled, chopped
Sorbet, all flavours
320 g, mango (4 x 80g scoops)
Mango
1 medium, thinly sliced
Fresh strawberries
250 g, thinly sliced
Passionfruit(s)
2 tbs, pulp
Instructions

Using a small serrated knife, carefully split each wafer in half. Place pistachios on a plate.

Place a scoop of sorbet onto 4 wafer halves. Gently sandwich with remaining wafers. Roll sides of sorbet in pistachios.

Combine mango, strawberries and passionfruit pulp in a bowl. Serve with sorbet sandwiches.
