Lime yoghurt with fruit and meringues

Keep this adaptable recipe in your regular dessert rotation and mix it up using oranges, mandarins and lime zest or whatever is in season.


Ingredients
99% fat-free, plain or natural yoghurt, unsweetened
1 cup(s), (240g)
Caster sugar
1 tbs
Lime rind
¾ tsp, finely grated
Mango
1 large, chopped
Fresh raspberries
125 g
Fresh blueberries
125 g
Meringue
40 g, (4x10g nests)
Instructions

Combine yoghurt, sugar, lime rind and pinch of salt in a small bowl.

Gently toss together mango, raspberries and blueberries in a medium bowl.

Divide yoghurt mixture evenly among 4 shallow bowls. Top with mango mixture. Crumble meringue nest over each bowl to serve.
