Lime yoghurt with fruit and meringues
Keep this adaptable recipe in your regular dessert rotation and mix it up using oranges, mandarins and lime zest or whatever is in season.
99% fat-free, plain or natural yoghurt, unsweetened
1 cup(s), (240g)
¾ tsp, finely grated
1 large, chopped
40 g, (4x10g nests)
- Combine yoghurt, sugar, lime rind and pinch of salt in a small bowl.
- Gently toss together mango, raspberries and blueberries in a medium bowl.
- Divide yoghurt mixture evenly among 4 shallow bowls. Top with mango mixture. Crumble meringue nest over each bowl to serve.
