Serve this beautiful salad in a large clear bowl for maximum oohs and aahs.


Ingredients
Iceberg lettuce
4 cup(s), shredded, shredded
Mushrooms
250 g, (button), thinly sliced
Frozen green peas
2 cup(s), (260g), thawed
Green shallot(s)
3 individual, thinly sliced
Egg(s)
2 medium, hard-boiled, thinly sliced
Low-fat mayonnaise
1 cup(s)
Extra light sour cream
2 tbs, (Weight Watchers)
Lemon juice
1 tbs
Dijon mustard
2 tsp
Extra light cheddar cheese
¾ cup(s), grated, (90g), grated
Tomato(es)
1 medium, chopped
Fresh flat-leaf parsley
¼ cup(s), roughly chopped
Instructions

Layer lettuce, mushrooms, peas, shallots and egg in a large bowl.

Whisk mayonnaise, sour cream, juice and mustard in a small bowl until combined. Season with salt and freshly ground black pepper. Pour dressing over salad and refrigerate for 2 hours.

Sprinkle salad with cheese, tomato and parsley. Serve.
