- Layer lettuce, mushrooms, peas, shallots and egg in a large bowl.
- Whisk mayonnaise, sour cream, juice and mustard in a small bowl until combined. Season with salt and freshly ground black pepper. Pour dressing over salad and refrigerate for 2 hours.
- Sprinkle salad with cheese, tomato and parsley. Serve.
