A fool is an English dessert of puree fruit in layers of sweet, creamy custard. This kiwifruit fool is made with a combination of yogurt and ricotta and a dash of vanilla for super creamy custard.

Ingredients

Kiwifruit

4 medium, chopped

Granulated stevia sweetener

1½ tbs

Vanilla bean extract, alcohol free

1 tsp

99% fat-free, plain or natural yoghurt, unsweetened

1 cup(s), (240g)

Ricotta cheese

¾ cup(s), (195g)

Instructions

  1. Process kiwifruit in a food processor until just combined (see note). You will need about 1 cup (250ml) of kiwifruit puree.
  2. Process stevia, vanilla, yoghurt and ricotta in cleaned food processor until smooth.
  3. Alternately layer yoghurt and kiwifruit puree in four ¾-cup (185ml) capacity serving glasses. Place in fridge for 4 hours or until chilled. Serve.

Notes

TIPS: This dessert can be eaten straightaway but is better left for several hours or overnight in the fridge to chill and slightly set. Take care not to over-process the kiwifruit as this will break up the seeds and can make the mixture bitter.
