Ingredients

Panko breadcrumbs

30 g

Skim milk

cup(s), (80ml)

Onion

1 medium, finely chopped

Garlic

3 clove(s), crushed

Extra lean beef mince, raw

1500 g

Egg(s)

2 medium, lightly beaten

Fresh flat-leaf parsley

cup(s), roughly chopped

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat oven to 180°C. Line 2 large baking trays with baking paper.
  2. Combine breadcrumbs and milk in a large bowl and leave to soak for 5 minutes. Add onion, garlic, mince, eggs and parsley. Season well with salt and pepper. Mix with clean hands until combined. Shape level tablespoons of meatball mixture into 76 meatballs.
  3. Spread the meatballs evenly over the prepared trays and lightly spray with oil. Bake for about 15 minutes, or until lightly browned and cooked through. Eat straight away or set aside to cool before portioning and freezing.
