Jonathan's orange and almond Christmas pudding balls
Dry rolled oats
1 cup(s), (90g)
6 individual, pitted and chopped
Sugar-free maple flavoured syrup
1 medium, juiced to make ¼ cup (60ml) juice
Shredded or desiccated coconut
Dark chocolate, no added sugar
40 g, orange flavoured
- Process almonds, oats and dates in a large food processor until finely chopped. Add the almond butter, syrup, orange rind and juice and pulse until the mixture comes together.
- Place coconut on a small plate. Use damp hands to shape mixture into 18 balls, then roll balls in coconut to coat and place onto a large plate.
- Microwave chocolate in a small microwave-safe bowl in 30 second bursts on High (100%), stirring until smooth and melted. Dollop melted chocolate evenly over each ball, then place in the fridge for 2 hours, or until chocolate is set.
