Jonathan's orange and almond Christmas pudding balls

Ingredients
Raw almonds
20 g
Rolled oats, dry
1 cup(s), (90g)
Fresh dates
6 individual, pitted and chopped
Almond butter
2 tbs
Sugar-free maple syrup
2 tsp
Orange rind
2 tbs
Orange(s)
1 medium, juiced to make ¼ cup (60ml) juice
Shredded or desiccated coconut
2 tsp
No added sugar dark chocolate
40 g, orange flavoured
Instructions

Process almonds, oats and dates in a large food processor until finely chopped. Add the almond butter, syrup, orange rind and juice and pulse until the mixture comes together.

Place coconut on a small plate. Use damp hands to shape mixture into 18 balls, then roll balls in coconut to coat and place onto a large plate.

Microwave chocolate in a small microwave-safe bowl in 30 second bursts on High (100%), stirring until smooth and melted. Dollop melted chocolate evenly over each ball, then place in the fridge for 2 hours, or until chocolate is set.
