Japanese beef, vegetable and udon stir-fry

Stir-fries are a great go-to dinner because they are quick to make and it’s a great way to use up all your left over vegies in the fridge.

Ingredients

Sesame oil

4 tsp

Beef stir-fry strips, raw

500 g

Shiitake mushrooms

100 g, stalks removed, sliced

Fresh ginger

2 tsp, finely grated

Vegetable mix, non-starchy, fresh

400 g, stir-fry variety

Shelf fresh udon noodles

400 g

Tamari, salt-reduced

2 tbs, Japanese soy sauce

Mirin seasoning

1 tbs

Instructions

  1. Heat a wok over high heat. Add sesame oil and heat for 30 seconds. Stir-fry beef strips, in 2 batches, for 2-3 minutes or until browned. Transfer to a bowl.
  2. Heat reaming oil in wok. Add mushrooms, ginger and stir-fry for 1 minute. Add stir-fry vegetables and 2 tbs water. Stir-fry for 2-3 minutes or until vegetables are just tender. Add noodles, soy sauce, mirin and beef. Stir-fry for 2 minutes or until heated through.

Notes

TIP: We used a stir-fry mix with broccoli, red cabbage, carrot, zucchini, red capsicum, onion and snow peas. Find it in the fruit and vegetable aisle. Alternatively, use any fresh or frozen stir-fry vegetable combination you like.
