Quick and easy steak with added Italian rustic flavours. What’s not to love about this dish that can be on the table in less than 30 minutes!

Ingredients

Olive oil

1 tbs

Brown onion

1 medium, cut into 1cm dice

Eggplant

1 medium, cut into 1cm dice

Zucchini

2 medium, cut into 1cm dice

Tomato(es)

2 medium, cut into 1cm dice

Garlic

2 clove(s), crushed

Fresh basil

½ cup(s), torn

Beef minute steak, raw

380 g, (8 x 60g steaks) fat trimmed

Reduced fat feta cheese

80 g, crumbled

Oil spray

1 x 3 second spray(s), pan

Instructions

Heat oil in a frying pan over medium-high heat. Cook onion, stirring, for 2-3 minutes. Add eggplant and zucchini and cook, stirring, for 5 minutes. Stir tomatoes and garlic and cook, covered, over medium heat for 3-5 minutes. Stir in basil leaves. Season.

Lightly spray a pan with oil and heat over high heat. Season minute steaks. Cook for 30 seconds each side. Serve with vegie mixture and feta.
