Take cookies as a base and create a fancy ice-cream treat!
Biscuits, chocolate chip, reduced-fat
2 tbs, chopped, toasted
Low fat, no added sugar ice cream
160 g, (8 tbs)
60 g, halved
- Place half the cookies on a board, and sprinkle with walnuts. Carefully place a tbs of ice-cream onto each cookie, then top with raspberries.
- Top with remaining cookies. Gently press together. Place sandwiches on a baking tray and freeze for 1 hr or until firm. Serve.
TIP: You can make sandwiches ahead of time, wrap each sandwich tightly in plastic wrap after they are firm, and return to freezer for up to 24 hrs. Leave to stand at room temperature for about 5 mins to soften slightly before serving.
