Teriyaki hot smoked salmon noodle salad

Unexpected lunch guests? Use your noodles and whip up this quick an easy salad that beats a boring sandwich any day.

Ingredients

Dry rice noodles

200 g

Hot smoked salmon

300 g

Mixed salad leaves

4 cup(s), (120g)

Red capsicum

1 medium, thinly sliced

Teriyaki sauce

cup(s), (80ml)

Sesame seeds

1 tbs, toasted

Instructions

  1. Fill and boil the kettle. Prepare noodles following packet instructions or until just tender. Drain. Rinse under cold water. Drain. Transfer to a large bowl.
  2. Add noodles, salmon, salad leaves, capsicum, sauce and half the seeds and toss gently to combine. Serve sprinkled with remaining seeds.

Notes

TIP: Hot-smoked salmon fillets are pieces of salmon that have been salt-cured and then smoked. They are available in packets in the seafood section of most supermarkets.For extra flavour you can toss the sesame seeds in a small non-stick frying pan over medium heat until golden and toasted.
