Honey roasted baby carrots with almonds

The subtle sweetness of the honey, zesty lemon and nutty crunch of the almonds transforms a plain old veg into a side dish that will call for seconds!


Ingredients
Flaked almonds
2 tbs
Honey
1 tbs
Baby carrot
10 individual, (2 bunches)
Reduced fat oil spread
2 tsp
Lemon zest
1 tsp, finely grated
Instructions

Preheat oven to 200°C or 180°C fan-forced. Place carrots on a large baking tray.

Place canola spread, honey and lemon rind in a small microwave-safe bowl. Microwave on High (100%) for 20 seconds or until spread has melted.

Pour mixture over carrots and toss to coat. Season with salt and pepper. Bake for 20 minutes.

Sprinkle with flaked almonds and bake for 8–10 minutes or until carrots are tender and almonds are golden. Serve.
