Hoisin chicken, avocado and snow pea rice paper rolls
Skinless chicken breast, grilled or barbecued
360 g, (2 cups, shredded)
60 ml, (¼ cup plus 2tbs to serve)
rice paper roll wrappers
12 individual, (12 x 22cm rice paper sheets)
1 large, cut into matchsticks
150 g, thinly sliced lengthways
1 large, sliced
- Combine chicken and sauce in a medium bowl. Set aside.
- Soak a rice-paper sheet in a dish of warm water for 10 seconds. Drain on paper towel and transfer to a clean work surface. Place a little chicken mixture, carrot, snow peas and avocado down the centre. Fold in sides and roll to enclose filling. Repeat with remaining rice-paper sheets, chicken mixture, carrot, snow peas and avocado. Serve immediately with extra sauce.
