Heirloom tomato salad with mint and feta
The more tomatoes the merrier! Red tomatoes and green mint add to the Christmas cheer and add a pop of colour to the table.
800 g, (mixed medley), thinly sliced
4 medium, roma variety, thinly sliced
½ cup(s), leaves
Reduced fat feta cheese
40 g, crumbled
- Arrange the combined tomato and mint on a serving platter. Sprinkle with the feta and drizzle with the oil. Season with salt and pepper to serve.
