Heirloom tomato caprese salad

Liven up a traditional Italian salad with a medley of tomatoes. The colour makes this an irresistible side!

Ingredients

Cherry tomatoes

400 g, mixed medley heirloom

Mozzarella

110 g, buffalo

Fresh basil

½ cup(s)

Kale

100 g

Balsamic vinegar

1 tbs

Olive oil

2 tsp

Instructions

  1. Slice tomatoes in half and arrange on a platter. Tear the mozzarella into bite-sized pieces and layer in between tomato slices. Top with basil leaves.
  2. Combine the vinegar and oil in a small bowl and pour over the salad. Season with pepper.

Notes

TIP: Add it: 4 x 40g slices rye sourdough bread to serve . Swap it: Buffalo mozzarella for baby bocconcini cheese (torn).
