5 minutes in the microwave and you have yourself the most delicious, light and fluffy cake you can enjoy any day of the week. Custard compliments the flavours perfectly without piling on the PersonalPoints.

Ingredients

Banana(s)

1 medium, ripe, mashed

Egg(s)

1 medium, lightly beaten

Hazelnut meal

2 tbs

Dry vanilla dessert or pudding mix

2 tsp, (see tip)

Reduced-fat vanilla custard

1 tbs

Baking powder

1 tsp

Instructions

  1. Mix banana and egg in a small bowl. Add hazelnut meal, dessert mix and baking powder and stir to combine.
  2. Spoon mixture into a microwave-safe mug. Microwave on Medium-High (70%) for about 4 minutes or until set in centre. Serve with custard.

Notes

Ingredient tip: You can find vanilla dessert mix (sometimes labelled as instant pudding) in the baking aisle in major supermarkets.
