Ham and semi-dried tomato souffle omelette
2 tbs, finely chopped
97% fat-free deli sliced ham
100 g, (chopped)
Grated parmesan cheese
¼ cup(s), (20g)
Semi dried tomatoes, not in oil
½ cup(s), (6 tbs) (chopped)
4 x 3 second spray(s)
Light cheddar cheese

- Using electric beaters, beat egg whites until soft peaks form.
- Combine egg yolks, chives and parmesan cheese in a bowl. Fold egg whites into yolk mixture. Spray a medium non-stick frying pan with oil and heat over medium-high.
- Add one-quarter of egg mixture and sprinkle with ham, semi-dried tomatoes and tasty cheese. Reduce heat to low and cook for 2 mins or until egg mixture is almost set. Fold omelette over. Slide onto a plate. Repeat to make 4.
