Ham and orange couscous salad

97% fat-free deli sliced ham
150 g, torn into bite size pieces
2 large, segmented, juice reserved
Mixed salad leaves
4 cup(s), (120g)
40 g, (2tbs)
4 individual, finely chopped
1 tbs, (extra virgin)
- Boil 1 cup (250ml) of water in a kettle. Pour into a large heatproof bowl. Stir in the couscous and season with salt and pepper. Cover and set aside for 5 minutes or until the liquid is absorbed. Use a fork to separate the grains.
- Toss the ham, orange, mixed leaves, cranberries and dates through the couscous. Pour over the oil and the reserved orange juice. Stir to combine. Season with salt and pepper.
