Haloumi and prosciutto bites

Creamy cheese and salty prosciutto make these morsels melt in your mouth. Lemon thyme and olive oil add another flavour dimension
Prosciutto fat trimmed
90 g, (6 slices)
1 tbs, (lemon), finely chopped

- Cut haloumi cheese into eighteen 2cm cubes. Cut prosciutto (fat trimmed) lengthways into 3 pieces. Lay prosciutto slices on a flat surface and sprinkle with lemon thyme.
- Place 1 haloumi cube on the short end of each slice of prosciutto. Roll prosciutto to wrap around the middle of the haloumi.
- Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook haloumi and prosciutto bites for 1–2 minutes each side or until golden. Arrange on a serving platter and insert a toothpick in each. Drizzle with lemon juice and extra-virgin olive oil. Serve.
