Ingredients

Instant coffee

1 tbs, finely ground

Brown sugar

3 tsp

Ground cumin

1½ tsp

Chipotle sauce

1 tsp

Beef sirloin steak, raw

630 g, (buy 700g) fat trimmed

Pear(s)

3 large, firm-ripe, cored, finely chopped

Dried cranberries

cup(s), (50 g)

Red onion

½ medium, finely chopped

Fresh coriander

2 tbs, chopped

Lime juice

2 tbs

Jalapenos

1 individual, deseeded, finely chopped

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine coffee, sugar, cumin and chipotle sauce in a small bowl. Season with salt and pepper. Rub coffee mixture over beef. Stand at room temperature for 15 minutes.
  2. Meanwhile, combine pear, cranberries, onion, coriander, juice and chilli in a medium bowl. Season with salt.
  3. Lightly spray a chargrill or barbecue with oil and heat over high heat. Cook beef for 3-4 minutes each side or until cooked to your liking. Transfer to a plate. Cover beef with foil and set aside to rest for 5 minutes before thickly slicing. Serve steak with salsa.

Notes

You can substitute the jalapeno chilli with 1 long fresh green chilli, finely chopped.
