Grilled chicken with white bean salsa

This is a fresh and tasty salsa that is perfect for outdoor summer entertaining. With smooth and creamy avocado and fluffy, nutty cannellini beans it is a real winner.


Ingredients
Canned cannellini beans, rinsed, drained
1 400g can
Skinless chicken breast
540 g, (buy 600g) fat trimmed
Tomato(es)
2 medium, chopped
Avocado
1 medium, chopped
Lebanese cucumber
1 medium, chopped
Red onion
½ medium, finely chopped
Fresh coriander
⅓ cup(s), chopped
Olive oil
1 tbs
Lemon juice
1 tbs
Garlic
1 clove(s), crushed
Oil spray
1 x 3 second spray(s)

Lightly spray a chargrill or barbecue with oil and heat on medium-high. Season the chicken with salt and pepper and chargrill for 4-5 minutes each side or until cooked through.

Meanwhile, combine the beans, tomato, avocado, cucumber, onion and coriander in a medium bowl. Whisk the oil, lemon juice and garlic in a small bowl until combined. Season with salt and pepper. Add the dressing to the salsa and toss to coat. Serve the chicken with the salsa.
