Goat's cheese and prosciutto pizzas

Pita bread is an easy substitute for regular pizza bases. Play around with different gourmet toppings to suit your taste!


Ingredients
Wholemeal pita bread
240 g, (4 x 60g rounds)
Tomato pasta sauce
½ cup(s), onion and roasted garlic variety (130g)
Extra light cheddar cheese
½ cup(s), grated, (60g)
Yellow capsicum
1 medium, thinly sliced
Prosciutto fat trimmed
100 g, thinly sliced, fat trimmed
Soft goat's cheese
60 g, crumbled
Fresh thyme
2 tsp
Rocket
1½ cup(s), (30g)
Baby spinach
1½ cup(s), (30g)
Zucchini
1 large, trimmed, grated
Red onion
½ medium, thinly sliced
Instructions

Preheat oven to 240°C or 220°C fan-forced. Place pita bread on two baking trays, spread with the tomato pasta sauce. Sprinkle with cheddar cheese then arrange the capsicum, prosciutto, goat’s cheese and thyme on top.

Place in the oven and bake pizzas for 10–12 mins or until the bases are crisp and the capsicum is tender.

Meanwhile combine the rocket, spinach, zucchini and onion in a salad bowl. Serve pizzas with salad.
