Gnocchi tuna bake

Spruce up the dinner table by teaming tuna, veg and gnocchi with a Mediterranean-style sauce. All comforting ingredients bursting with flavour.


Ingredients
Fresh uncooked potato gnocchi
500 g
Brown onion
1 medium, chopped
Mushrooms
250 g, cup variety, quartered
Canned diced tomatoes
1 400g can, (1 x 400g can)
Frozen green peas
2 cup(s), (240g)
Tuna, canned in springwater, drained
285 g, (use 1 x 425g can)
Grated parmesan cheese
⅓ cup(s), (25g)
Oil spray
1 x 3 second spray(s)

Preheat oven to 180°C.

Cook gnocchi in a large pot of boiling salted water, following packet instructions. Remove from pot with a slotted spoon and transfer to a 2L (8-cup capacity) ovenproof dish

Meanwhile, lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook onion, stirring for 5 minutes, or until soft. Add mushrooms and cook, stirring, for a further 5 minutes. Reduce heat to low then stir in tomatoes, peas and tuna. Season with salt and pepper.

Pour tuna mixture over gnocchi and sprinkle with parmesan. Bake for 15 minutes. Sprinkle with oregano to serve.
