Wholemeal pita bread

Low-fat ricotta cheese
1 tbs
Soft goat's cheese
20 g
Tomato(es)
60 g, medley, sliced
Sunflower seeds
1 tsp, toasted
Pumpkin seeds (pepitas)
1 tsp, pepitas, toasted
Fresh basil
1 tbs
Basil pesto
1 tsp
Oil spray
1 x 3 second spray(s)

Preheat a chargrill or barbecue over high heat. Lightly spray pita bread with oil. Cook for 2–3 minutes each side or until golden and crisp.

Meanwhile, combine ricotta and goat’s cheese in a small bowl until smooth. Spread ricotta mixture over pita. Top with tomato, sunflower seeds, pepitas and basil leaves. Top with basil pesto to serve.
