Falafels should not be reserved for vegetarians – they make a wholesome and filling ingredient when teamed with cooling cucumber, juicy tomato and crunchy red onion


Ingredients
Lebanese cucumber
1 medium, chopped
Tomato(es)
1 medium, chopped
Red onion
¼ medium, sliced
Fresh flat-leaf parsley
¼ cup(s), chopped
Falafel
100 g, (10 x 10g balls)
Wholemeal lebanese bread
2 small
Baba ganoush
2 tbs
Instructions

Place cucumber, tomato, onion and parsley in a medium bowl, tossing to combine. Season with salt and freshly ground black pepper.

Warm falafels in microwave on high (100%) for 30 seconds or until warmed through.

Place bread on a flat surface. Spread each round with baba ganoush. Arrange falafels down the centre of each round. Top with cucumber salad, then roll tightly to enclose filling. Cut in half to serve.
