Falafel and hummus pita wrap

Ready in just 15 minutes, this tasty Lebanese-style vegetarian wrap makes a satisfying working-from-home lunch, but it’s equally good wrapped up for a meal on-the-go.


Ingredients
Falafel
120 g, cooked, (see tip)
Lebanese bread
2 individual, (2 x 85g)
Hummus
2 tbs
Cos lettuce
1½ cup(s), (75g) shredded
Cherry tomatoes
8 individual, sliced
Red onion
¼ small, thinly sliced
Light tasty cheese
15 g, grated
Instructions

Heat falafels following packet instructions. Spread breads with hummus.

Thinly slice falafels and arrange down the centre of each bread with lettuce, tomato, onion and cheese. Roll up tightly to enclose filling. Cut in half to serve.
