Who would have thought that fairy floss and champagne would marry together so well? Sweet and bubbly – so perfect for festivities!


Ingredients
Natural essence
1 tbs, (rosewater)
Pomegranate
1 medium, seeds removed
Sparkling white wine
750 ml, (pink champagne or sparkling rose)
Confectionery, sugar, hard varieties
15 g, (fairy floss)
Instructions

Divide rosewater and pomegranate seeds among champagne glasses. Top up with chilled pink champagne or sparkling rosé.

When the bubbles subside, divide fairy floss among the glasses, to rest on top of the wine. Serve immediately.
