Try this recipe for easy banana cookies that only requires 5 ingredients! They're perfect for using up overripe bananas and can be customised by adding in different mix-ins like cranberries, raisins, or chocolate chips. Bake them for less time if you prefer softer cookies or longer for more solid ones. Freeze any leftovers for a quick snack on the go.

Banana(s)

2 medium, very ripe

Rolled oats, dry

1 cup(s), (90g)

Ground cinnamon

1½ tsp

Dried cranberries

¼ cup(s), (40g)

Instructions

  1. Preheat oven to 190°C. Line a baking tray with baking paper.
  2. In a medium bowl, mash bananas. Add oats and cinnamon, then mix very well. Fold in cranberries. Scoop 1 tablespoon of dough onto prepared tray and repeat with remaining dough to make 14 cookies (leave an inch between each cookie). Bake until firm, about 10 to 12 minutes.
