The classic ham and cheese toastie for a quick on the go lunch is a no-brainer, right? Yes—however this toastie is taken to the next level with double meat and a flavour boost of mustard and gherkins tucked in fresh whole grain bread and lightly toasted.

Ingredients

Wholegrain bread

4 slice(s), (4 x 35g slices)

Mustard

3 tsp, American style

Skinless turkey breast, baked or roasted

60 g, (2 x 30g slices)

97% fat-free deli sliced ham

60 g, (2 x 30g slices)

Reduced-fat Swiss cheese

2 slice(s), (2 x 20g slices)

Pickled gherkin, drained

1 individual, cut into 6 thin slices

Oil spray

1 x 3 second spray(s)

Instructions

  1. Spread 2 slices of bread evenly with mustard, then layer each with 1 turkey slice, 1 ham slice, 1 Swiss cheese slice and 3 pickle slices. Cover each with 1 slice of bread.
  2. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Add sandwiches and press down with a spatula to compress. Cook for about 2 minutes on each side, or until cheese is melted and bread is golden brown and crispy (or cook in an electric sandwich press).
