Date spiced apple crumble mug muffin

For a comforting start to a chilly morning, you can’t beat this fast and fruity cinnamon crumble. Try changing it up by swapping in a pear for the apple, and replacing cinnamon with ground ginger.
1 medium, peeled, cut into 2cm pieces
Dry rolled oats
1 individual, pitted and finely chopped
Reduced fat oil spread
- Place apple, honey and ¼ teaspoon cinnamon in a bowl and stir to combine. Spoon into a 1 cup (250 ml) capacity microwave-safe mug.
- Combine oats, date and remaining cinnamon in a small bowl. Rub in oil spread to form a crumble. Sprinkle crumble over apple.
- Microwave on High (100%) for 2½ minutes, or until apple is tender. Stand for 5 minutes to cool slightly before serving.
TIP: You can use any variety of apple in this recipe. Add a dollop of 99% fat-free plain yoghurt to serve
