A creation that looks incredibly fancy and tastes just as good!

Ingredients

Tomato(es)

250 g, (baby roma)

97% fat-free cottage cheese

120 g, (1/2 cup)

Garlic

1 clove(s), crushed

Spring onion(s)

1 individual, bunch, trimmed

Instructions

  1. Cut the smooth end of the tomatoes in a criss-cross pattern (not the stem end). Discard seeds and excess juice.
  2. Combine cottage cheese and garlic in a medium bowl. Season with pepper. Fill a piping bag with the cheese mixture. Pipe the cheese mixture into the tomatoes.
  3. Arrange the tomatoes and the onion stems on a serving plate to form a bouquet.

Notes

TIP: You can also flavour the cottage cheese with chopped chives, basil or parsley. You can make this up to 4 hours ahead of time and store in the fridge.
