Coriander, cashew and sesame pesto
Add a dollop of tasty homemade pesto to a plate of pasta or as a topping for meat or fish. It's an instant dinner winner!
1 tbs, grated
Fresh red chilli
1 whole, deseeded, chopped
25 g, grated
Unsalted roasted cashew nuts
¼ cup(s), unsalted
1 tsp, finely grated
- Place coriander leaves, fresh ginger, chilli, cheese, cashews and lime rind in a food processor. Process until roughly chopped.
- With the motor running, gradually add sesame oil and mirin. If pesto is too thick, add a little warm water. Season with salt and freshly ground black pepper.
TIP: Great with grilled prawns or salmon, or tossed through soba, udon or rice noodles.
