Coffee rubbed steaks

480 g, (Buy 600g), fat trimmed
orange sweet potato (kumara)
500 g, cut into wedges
½ tsp, mixed
2 x 3 second spray(s)
- Combine coffee, sugar, paprika, garlic and chilli in a small bowl. Rub mixture over beef. Season with salt and pepper.
- Preheat oven to 200°C. Line a baking tray with baking paper. Arrange sweet potato in a single layer on prepared tray and lightly spray with oil. Sprinkle with herbs and season with salt and pepper. Bake for 20 minutes or until golden and tender.
- Meanwhile, lightly spray a chargrill or barbecue with oil and preheat over medium-high heat. Cook beef for 2-3 minutes each side or until cooked to your liking. Transfer to a plate. Cover beef with foil and set aside to rest for 5 minutes before thinly slicing and serving with sweet potato wedges. Drizzle with resting juices.
