Start the day right with a bowl of crunchy, homemade granola.


Dry rolled oats

3 cup(s), (270g)

Slivered almonds

90 g


100 g

Maple syrup

2 tbs

Canola oil

2 tbs

Vanilla bean extract

1 tsp

Shredded or desiccated coconut

¼ cup(s), (20g)

Dried apricots

160 g, (buy diced variety)

Dried cranberries

65 g


  1. Preheat oven to 180°C. Combine the oats, almonds and pepitas in a large bowl and drizzle with the maple syrup, oil and vanilla. Mix to combine.
  2. Spread the mixture into a large roasting pan. Bake for 10 minutes. Stir and cook for a further 5 minutes.
  3. Add the coconut, stirring to combine, and cook for a further 5 minutes or until the mixture is golden brown. Set aside to cool completely.
  4. Mix in the apricot and cranberries and store in an airtight container.


SERVING SUGGESTION: 99% fat-free plain yoghurt (contains dairy) and a fresh fruit salad of banana, strawberries and passionfruit. TIP: For a simple dessert, sprinkle this crunchy muesli over stewed fruit – think cheats crumble!
