Citrus fruit salad with ginger and honey syrup
2 tbs, (3cm piece) cut into matchsticks
granulated stevia sweetener
1 medium, peeled, thinly sliced
2 whole, rudy red, peeled, thinly sliced
2 medium, peeled, thinly sliced
2 small, peeled, thinly sliced
- Place honey, ginger, stevia and ¼ cup (60ml) water in a small saucepan over medium-high heat. Bring to the boil. Reduce heat and simmer, uncovered, for 3 minutes or until stevia has dissolved and syrup thickens.
- Combine lime, grapefruit, mandarin and orange in a shallow dish. Pour over syrup. Cover and place in fridge for 1 hour or until chilled and flavours have infused. Serve topped with mint.
