Cinnamon baked French raisin toast

8 slice(s), (8x25g slice) halved diagonally
1 cup(s), (250ml)
Vanilla bean extract, alcohol free
¼ tsp, (pinch)
- Lightly spray a 20 x 28 cm rectangular ovenproof dish with oil. Arrange bread in dish, slightly overlapping slices
- Whisk eggs, milk, 1½ tablespoons sugar, vanilla, cinnamon, nutmeg and a pinch of salt in a large jug. Pour egg mixture evenly over bread and lightly press to help bread absorb egg mixture. Cover and refrigerate at least 1 hour or overnight.
- Preheat oven to 200°C. Uncover dish and sprinkle with remaining sugar. Bake 35 minutes or until puffed and golden. Cool 10 minutes before serving.
