Chocolate bread and butter pudding

Ingredients
Wholemeal bread
270 g, (9 x 30g slices), lightly toasted
Reduced fat oil spread
25 g
Egg(s)
3 medium
Chocolate drinking powder
2 tbs
Cocoa powder
3 tsp
Granulated stevia sweetener
2 tsp
Vanilla bean extract, alcohol free
1 tsp
Unsweetened almond milk
200 ml
Dark chocolate chips
25 g
Instructions

Preheat oven to 160°C. Spread each slice of toast with a little of the spread and cut in half diagonally.

Whisk together eggs, drinking chocolate, cocoa, stevia, vanilla and almond milk in a jug until completely smooth.

Arrange toast in a small ovenproof dish then pour over chocolate custard mixture and leave to soak for 5 minutes.

Sprinkle with chocolate chips. Bake for 30-35 minutes until cooked through. Serve warm.
