Chocolate bread and butter pudding
270 g, (9 x 30g slices), lightly toasted
reduced fat oil spread
chocolate drinking powder
granulated stevia sweetener
vanilla bean extract, alcohol free
almond milk unsweetened
dark chocolate chips
- Preheat oven to 160°C. Spread each slice of toast with a little of the spread and cut in half diagonally.
- Whisk together eggs, drinking chocolate, cocoa, stevia, vanilla and almond milk in a jug until completely smooth.
- Arrange toast in a small ovenproof dish then pour over chocolate custard mixture and leave to soak for 5 minutes.
- Sprinkle with chocolate chips. Bake for 30-35 minutes until cooked through. Serve warm.
