Chocolate and peanut butter mug muffin

Mug muffins are a fantastically easy and quick way to make a perfectly-portioned cake for one. Typical recipes are high in Points, but our version leans on powdered peanut butter, monk fruit sweetener, and Greek yoghurt to keep the Points low.


Ingredients
99% fat-free, plain Greek yoghurt, unsweetened
¼ cup(s)
Egg(s)
1 medium
Plain peanut butter powder
2½ tbs
Monk fruit sweetener
3 tsp
Cocoa powder
2½ tsp
Baking powder
½ tsp
Oil spray
1 x 3 second spray(s)
Instructions

In a medium bowl, whisk together yoghurt and egg until smooth. Stir in powdered peanut butter, sweetener, cocoa, and baking powder until well combined.

Lightly spray a 410ml-capacity microwave safe mug. Spoon batter into mug. Microwave on High 1-1½ minutes, until the cake rises to the top and is cooked through. Serve immediately.
