Chilli and semi-dried tomato pesto

Add a dollop of tasty homemade pesto to a plate of pasta or as a topping for meat or fish. It's an instant dinner winner!


Ingredients
Semi-dried tomatoes
75 g
Fresh red chilli
3 whole, deseeded, chopped
Pine nuts
2 tbs, toasted
Olive oil
1 tbs
Instructions

Place semi-dried tomatoes, chillies and pine nuts in a food processor. Process until roughly chopped.

With the motor running, gradually add olive oil and process until almost smooth. If pesto is too thick, add a little warm water. Season with salt and freshly ground black pepper.
