Add some sweetness to a fresh crunchy salad with thin pieces of apple. It creates amazing texture and a burst of flavour complimenting the chicken and walnuts.

Ingredients

Cooked skinless chicken breast

80 g

Ranch dressing, light

10 ml, (2 tsp)

Green apple, unpeeled

¼ small, cut into matchsticks

Lemon juice

3 tsp

Multigrain tortilla

43 g, or wholegrain wrap

Rocket

20 g

Red capsicum

¼ small, (1 tbs) sliced

Green capsicum

¼ small, (1 tbs) sliced

Snow pea sprouts

5 g

Walnuts

1 tbs, (25g) chopped

Instructions

  1. Combine chicken and dressing in a small bowl. Season with salt and pepper. Combine apple and lemon juice in a small bowl.
  2. Top wrap with rocket, capsicum, chicken mixture, apple mixture, sprouts and walnuts. Roll tightly to enclose filling. Serve.

Notes

SERVING SUGGESTION: Mixed salad leaves. TIP: You can use large iceberg lettuce leaves instead of a wholegrain wrap.
