Chicken, sweet potato and cottage cheese pizza

Homemade pizza is always tastier than store bought and this version is no exception. The sweetness of the potato and tender chicken pieces are brought together with the sauce and creamy cheese.

Ingredients

Orange sweet potato (kumara)

350 g, thinly sliced

Skinless chicken breast

300 g

Lebanese bread

200 g, (2 x 100g pieces)

Tomato paste

2 tbs

Barbecue sauce

2 tbs, smokey variety

97% fat-free cottage cheese

½ cup(s), (125g)

Rocket

30 g, leaves

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Lightly spray a baking tray with oil. Place sweet potato in a single layer on baking tray and lightly spray with oil. Season with salt and freshly ground black pepper, then bake, turning once, for 20–25 minutes or until cooked.
  2. Meanwhile, lightly spray a medium non-stick frying pan with oil and heat over medium-high heat. Add chicken and cook for 3–4 minutes each side or until just cooked through. Transfer to a plate and rest for 5 minutes before slicing thinly.
  3. Place Lebanese bread on two pizza or baking trays. Combine tomato paste and barbecue sauce in a small bowl. Spread sauce mixture over bread. Top with chicken and potato, then dollops of cottage cheese. Bake for 15–20 minutes or until bread is crisp. Serve pizzas topped with rocket leaves.

Notes

SERVING SUGGESTION: Salad of lettuce, ½ of a medium sliced avocado and red onion, 8 black olives and baby roma tomatoes drizzled with balsamic vinegar.
