Simple snags become quite snazzy when you add them to a tasty Tuscan salad.

Ingredients

White bread

136 g, (4 x 34g slices), Pane di casa variety

Extra lean chicken sausage(s)

8 thin

Tomato(es)

4 medium, chopped

Lebanese cucumber

3 medium, chopped

Red capsicum

2 medium, chopped

Celery

2 stick(s), thinly sliced

Red onion

½ medium, thinly sliced

Fresh basil

¼ cup(s), (12 fresh leaves) torn

Red wine vinegar

2 tbs

Olive oil

1 tbs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a chargrill or barbecue with oil and preheat over medium-high heat. Cook sausages, turning, for 6–8 minutes or until cooked through. Slice thickly.
  2. Combine tomato, cucumber, capsicum, celery, onion and basil in a large bowl. Whisk vinegar and oil in a small bowl. Season dressing with salt and pepper. Add bread, sausage and dressing to salad and toss gently to combine. Serve.

Notes

TIP: Pane di casa is Italian-style bread. You can use Vienna loaf instead.
