Chicken and spinach omelette

Baby spinach leaves
¼ tsp, (Pinch)
Garlic powder or flakes
¼ tsp, Pinch (optional)
Skinless chicken breast, grilled or barbecued
75 g, torn
Fresh flat-leaf parsley
1 tbs, coarsely chopped
- Place baby spinach in WW Omelette Maker. Close and microwave (70% power) for 45 seconds. Open and drain spinach well in a sieve, pushing with spoon to remove excess water. Set aside.
- Lightly beat eggs and milk. Add egg mixture, nutmeg, and garlic powder if using, to omelette maker. Season and stir to combine. Add chicken. Microwave (70% power) for 2 – 2 ½ minutes or until eggs are just set.
- Top one half with spinach and half the parsley. Using a spatula, fold omelette to enclose spinach. Transfer omelette onto a warm plate. Sprinkle with remaining parsley.
