Chicken and mango salad
Enjoy the flavours of Mexico which are made even tastier with the sweet mango
Whole skinless bbq chicken
1 medium, thinly sliced
250 g, halved
1 medium, coarsely chopped
¾ cup(s), sprigs
60 g, (strips)
- Remove the breasts from the chicken. Remove and discard the skin from chicken breasts. Coarsely shred the chicken breasts.
- Place the shredded chicken breast, mango, tomato, avocado, coriander and tortilla strips in a large bowl. Season with salt and pepper. Gently toss to combine.
TIP: Use remaining chicken in salads and sandwiches.
