Enjoy the flavours of Mexico which are made even tastier with the sweet mango


Ingredients
Whole skinless bbq chicken
320 g
Mango
1 medium, thinly sliced
Cherry tomatoes
250 g, halved
Avocado
1 medium, coarsely chopped
Fresh coriander
¾ cup(s), sprigs
Corn tortilla
60 g, (strips)
Instructions

Remove the breasts from the chicken. Remove and discard the skin from chicken breasts. Coarsely shred the chicken breasts.

Place the shredded chicken breast, mango, tomato, avocado, coriander and tortilla strips in a large bowl. Season with salt and pepper. Gently toss to combine.
