Fresh grapes add a surprising sweetness to this quick and easy lunchtime salad.



½ clove(s), crushed

Fresh flat-leaf parsley

1 tbs, chopped

Lebanese cucumber

1 medium, cut into ribbons

Green shallot(s)

1 individual, thinly sliced


¾ cup(s), red, halved

Iceberg lettuce

1 cup(s), shredded, shredded

Chicken, lean breast, skinless, stewed or braised

100 g, shredded

Olive oil

1 tsp

Lemon juice

1 tbs

Low-fat natural yoghurt

2 tbs


  1. Layer lettuce, grapes, cucumber, chicken, shallots and parsley in a glass jar or container.
  2. Whisk oil and juice in a small bowl until combined. Season dressing with salt and pepper. Combine yoghurt and garlic in a small bowl . Season with salt and pepper. Drizzle dressing over salad and serve topped with garlic yoghurt.


SERVING SUGGESTION: Wholemeal bread roll. TIP: Use a vegetable peeler to cut cucumber into ribbons. Assemble the salad the night before and place dressing and garlic yoghurt in separate small containers. Store in the fridge. To take it to work, transport in a chiller bag. Drizzle salad with dressing and top with garlic yoghurt before serving.
