Here’s a week night dinner with a tasty dish you can be proud of.

Ingredients

Olive oil

2 tsp

Beef scotch fillet (rib eye), raw

400 g, (Buy 4x125g steaks), fat trimmed

Mustard

1 tbs, American-style

Light cheddar cheese

2 slice(s), (2 x 21g slices), halved

Wholemeal bread roll

70 g, (2x35g)

Cos lettuce

1 cup(s), baby, quartered

Instructions

  1. Lightly brush steaks with oil. Heat a large non-stick frying pan and heat over high heat. Season the steak with salt and pepper. Cook the steak for 3 minutes each side. Spread the mustard over the steak and top with the cheese. Cover pan and cook for 1 minute for medium or until cooked to your liking and the cheese has melted.
  2. Cut the rolls in half and toast them. Top with the steak and serve with the lettuce.

Notes

VARIATION: Add cherry tomatoes (halved), red onion (thinly sliced) and chives (chopped), to serve or swap mustard for barbecue sauce.
