2 medium

Extra light cheddar cheese

15 g

Green shallot(s)

1 individual, finely chopped

Red capsicum

20 g, finely chopped

Bacon, middle rasher, trimmed, cooked

20 g, diced

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat WW Mini Waffle Maker. Lightly spray both Cooking Surfaces with oil.
  2. Lightly whisk eggs in a medium bowl. Stir in cheese, shallot, capsicum and bacon. Season with salt and pepper.
  3. Slowly pour ¼ cup of the egg mixture onto the bottom Cooking Surface of the WW Mini Waffle Maker. Use the Cover Handle to pull the Cover down and enclose waffle. Cook for 2-3 minutes, until golden brown and cooked through. Using a silicone spatula, transfer waffle to a plate and cover to keep warm. Repeat with remaining egg mixture to make 3 waffles in total, lightly spraying Cooking Surfaces with oil between each waffle. Serve.
