Forget what you thought you knew about salad rolls–this mouth-watering option uses cheddar, chutney and crunchy veggies for a fresh spin


Ingredients
Wholemeal bread roll
2 large, (2x70g), halved
Cos lettuce
1 cup(s)
Extra light cheddar cheese
½ cup(s), grated, (60g), grated
Celery
½ stick(s), sliced
Green capsicum
½ small, sliced
Fruit chutney
2 tbs, (mango)
Instructions

Cut rolls in half vertically, without cutting all the way through. Open them out and line with lettuce. Combine cheese, celery and capsicum in a small bowl, then arrange mixture over lettuce. Serve rolls topped with mango chutney.
