Cauliflower, potato and parmesan mash

Mash doesn’t have to be all about potatoes. This delicious side features supporting roles from comforting cauliflower and tangy parmesan for a veggie treat.
Potato, desiree, peeled, raw
⅓ medium, cut into florets
⅔ cup(s), (160ml)
Extra virgin olive oil
Grated parmesan cheese
¼ cup(s), (20g), finely grated
- Boil, steam or microwave potatoes and cauliflower separately, until tender. Drain.
- Using a food processor, process cauliflower with milk and olive oil until smooth. Add potato and pulse for a few seconds or until smooth and combined (do not over mix as potato will become sticky). Stir in parmesan cheese. Serve.
